Molten Cheesecake


  1. 150g cream cheese

  2. 65g sugar

  3. 3 egg whites

  4. 3 egg yolks

  5. 15g cake flour

  6. lemon zest

  7. butter

  2. Sieve the flour Grease the inside of the mould with butter and coat with sugar

  3. Whisk the cream cheese with 40 g of sugar till the sugar dissolves. Then add egg yolks and whisk until creamy and smooth. Strain the lumps

  4. Whisk the egg whites with 25g sugar till stiff. Ten fold in the flour.

  5. Pour into the egg yolk mixture from step(3). Add lemon zest. Fold well.

  6. Pour cheese mixture into the mould. Bake for 8-9 minutes in the preheated oven at 200 degree. Serve.


Grease the mould evenly. Otherwise it would be difficult to turn the cake out. Brush once first and put the mould into the fridge. Then brush on one more layer of butter for best results.
