French William Pear Terrine

Ingredients (2inch x 6 inche)

  1. 12 French William pears

  2. 60 g sugar (shortening)

  3. 2 lemons, zest only

  4. 3g cinnamon powder

  5. fresh cream

  6. watermelon

  7. baby apple

Method 

  1. Preheat pcen to 130 degree

  2. Peel off and core pears. Slice thinly. Arrange on a baking tray laid with baking mat. Sprinkle 60 g sugar on top. Bake for 20 minutes or until pear slices turn dried

  3. Brush the base of a 2 inch x 6 inch rectangular mould with shortening , Arrange in a thin layer of pear slices. Sprinkle with a little lemon zest and cinnamon. Arrange on a second layer of pear, following with lemon zest and cinnamon .Repeat the layering until all pear slices are used up.

  4. Bake in oven at 130 degree for 8 - 10 minutes. Remove and set aside for cooling, Refrigerate overnight.

  5. Remove terrine from the mould. Sprinkle some sugar on top. Burn with a kitchen butane torch untlsugar caramelized. Serve with fresh cream and fruit.
